A colorful and delicious taco salad featuring ground beef, fresh veggies, and crunchy Doritos, perfect for any gathering.

  • 1 lb ground beef
  • 1 package taco seasoning
  • 1 head iceberg lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 unit bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 bag (9.75 oz) Doritos, any flavor
  • 1 cup salsa
  • 1 cup sour cream
  • Sliced black olives (optional)
  • Jalapeños (optional)
  • Cilantro (optional)

Instructions

  1. Sautéing the Beef: In a skillet over medium heat, brown the ground beef until it’s fully cooked. Drain any excess fat and stir in the taco seasoning with the recommended amount of water. Simmer for about 5 minutes and set aside to cool slightly.
  2. Preparing the Salad Base: In a large salad bowl, combine the chopped lettuce, cherry tomatoes, bell pepper, and red onion. Add the drained black beans and toss everything together.
  3. Mixing in the Beef: Once the meat has cooled, add it to the salad bowl along with the shredded cheddar cheese.
  4. Crushing the Doritos: Crush the Doritos into bite-sized pieces and mix them in gently, ensuring not to break them down too much.
  5. Final Assembly: Just before serving, add the salsa and sour cream to the salad. Toss everything together until evenly coated.
  6. Garnishing: Garnish with olives, jalapeños, and cilantro if desired. Serve immediately.

Notes

For an extra kick, try using spicy taco seasoning or add more jalapeños. Keep the Doritos separate from the salad until serving to maintain their crunch.
