Mini handheld breakfast bites inspired by the McGriddle sandwich, perfect for busy mornings or cozy weekends.

Ingredients

  • 1 pound breakfast sausage (cooked and crumbled)
  • 2 cups Hungry Jack Pancake Mix
  • 1 cup water (or substitute with milk)
  • 1/4 cup maple syrup
  • 1 cup cheddar cheese (shredded)
  • 1/4 cup diced jalapeños (optional)
  • 1/2 cup blueberries (optional)

Instructions

  1. Preheat your oven to 400ºF (204ºC) and grease a mini muffin tin.
  2. Cook the breakfast sausage in a skillet over medium heat until browned, about 5-7 minutes.
  3. Combine pancake mix, water (or milk), and maple syrup in a mixing bowl.
  4. Fold in the sausage and cheddar cheese, along with jalapeños or blueberries if desired.
  5. Spoon the batter into the mini muffin tin, filling each cup about three-quarters full.
  6. Bake for 12-15 minutes or until golden brown.
  7. Cool slightly in the pan, then serve warm with maple syrup on the side.

Notes

These bites can be customized with different cheese or veggies. Store leftovers in an airtight container for up to 3 days.
