A moist banana cake filled with spices and topped with rich buttercream, perfect for any occasion.

  • 1 cup Unsalted Butter
  • 1 cup Sugar
  • 3 large Eggs
  • 1 tbsp Vanilla Extract
  • 1 tsp Cardamom
  • 1 cup Very Ripe Bananas (about 2 medium bananas)
  • 1 tbsp Lemon Juice
  • 2 cups All-Purpose Flour
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1 cup Buttermilk
  • 1 cup Unsalted Butter (for frosting)
  • 8 oz Mascarpone Cheese
  • 1 tbsp Vanilla Extract (for frosting)
  • 1 tsp Ground Cloves
  • 2 cups Confectioner’s Sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare cake pans.
  2. Cream the unsalted butter and sugar until light and fluffy.
  3. Incorporate the eggs one at a time, then add vanilla extract.
  4. Mash the bananas and set aside 1 cup of mashed bananas.
  5. Combine the dry ingredients in a separate bowl.
  6. Mix the wet ingredients, including lemon juice and buttermilk.
  7. Fold in the dry ingredients alternately with the mashed bananas.
  8. Bake in the prepared pans for 25-30 minutes.
  9. Cool the cakes in the pans for 10 minutes before transferring to a wire rack.
  10. Make the spiced vanilla buttercream by beating the unsalted butter and mascarpone.
  11. Frost the cooled cakes with the buttercream.
  12. Decorate with optional ground cloves or banana slices before serving.

Notes

Store leftover cake in an airtight container at room temperature for up to 2-3 days.
