A refreshing summer drink made with cucumber, mint, and lemon that transports you to sunny picnics and garden gatherings.

Ingredients

  • 1 cucumber, sliced
  • 1 cup fresh mint leaves
  • 1 cup lemon juice (freshly squeezed)
  • 4 cups water (or club soda for a fizzy version)
  • 23 tablespoons honey or agave syrup
  • Ice cubes (to serve chilled)

Instructions

  1. Prepare the mint by rinsing leaves and bruising them to release oils.
  2. Slice the cucumber thinly.
  3. Mix cucumber, mint, and lemon juice in a pitcher. Add water or club soda.
  4. Sweeten to taste with honey or agave syrup.
  5. Chill the lemonade by adding ice cubes and serve.

Notes

For a bubbly twist, substitute some water with sparkling club soda. Store leftovers in the refrigerator for up to 3 days.
