A refreshing cucumber salad with feta cheese and a zesty lemon vinaigrette, perfect for summer.

Ingredients

  • 1 large cucumber
  • 1/2 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the cucumber: Wash and thinly slice the cucumber, then place the slices in a large bowl.
  2. Whisk the vinaigrette: In a small bowl, whisk together the olive oil, fresh lemon juice, Dijon mustard, minced garlic, oregano, salt, and pepper until emulsified.
  3. Combine the vegetables: Add the thinly sliced red onion and chopped parsley to the cucumber. Mix gently.
  4. Dress the salad: Pour the lemon Greek vinaigrette over the vegetables and gently toss to coat evenly.
  5. Add the feta: Sprinkle the crumbled feta cheese over the salad and give it a final light toss.
  6. Serve & enjoy: Serve immediately or chill in the refrigerator for 10 minutes to allow the flavors to meld.

Notes

For extra crunch, try salting the cucumber slices and draining them briefly before mixing.
