A vibrant and refreshing salad featuring juicy cucumbers, sweet cherry tomatoes, creamy mozzarella, and fragrant basil, perfect for hot summer days.

Ingredients

  • 2 medium cucumbers
  • 1 pint cherry tomatoes
  • 8 oz mozzarella balls
  • 1/4 cup fresh basil, chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Wash the cucumbers thoroughly under cold running water.
  2. Slice the cucumbers into thin rounds.
  3. Halve the cherry tomatoes.
  4. Halve the mozzarella balls.
  5. Combine the sliced cucumbers, halved cherry tomatoes, halved mozzarella, and freshly chopped basil in a large mixing bowl.
  6. Drizzle the olive oil and balsamic vinegar over the salad.
  7. Season with salt and freshly ground black pepper to taste.
  8. Toss the ingredients gently to coat with dressing.
  9. Serve the salad immediately or let it chill in the refrigerator for a short while.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 2 days. For a crisper salad, chill your serving bowl beforehand.
