A delicious and indulgent Crock Pot dish that combines tender chicken, rich cream, and flavorful sun-dried tomatoes for a comforting meal.

  • 1 1/2 pounds Boneless skinless chicken breasts
  • 6 cloves Garlic (minced)
  • 1/2 cup Fresh spinach (chopped and packed)
  • 1/3 cup Reduced sodium chicken broth
  • 3/4 cup Grated Parmesan cheese
  • 1 tablespoon Olive oil
  • 1/2 cup Sun-dried tomatoes (chopped)
  • 1 tablespoon Italian seasoning
  • 1 cup Heavy cream
  • 1 teaspoon Sea salt
  • 1/4 teaspoon Black pepper

Instructions

  1. Prepare Your Chicken: Start by placing the boneless, skinless chicken breasts at the bottom of your Crock Pot.
  2. Mince the Garlic: Next, grab those six cloves of garlic and mince them finely.
  3. Add the Spinach: Take your fresh spinach and chop it up before packing it down slightly.
  4. Pour in the Broth: Add in the reduced sodium chicken broth to keep the chicken moist as it cooks.
  5. Sprinkle on the Goodies: Sprinkle the grated Parmesan cheese over the top followed by the chopped sun-dried tomatoes.
  6. Season it Up: Toss in the Italian seasoning, sea salt, and black pepper.
  7. Drizzle with Olive Oil: Drizzle the olive oil over the top.
  8. Pour in the Cream: Finally, pour the heavy cream over the top of everything.
  9. Cook it Low & Slow: Cover your Crock Pot and cook the chicken on low for about 4 hours.
  10. Serve Up the Goodness: When finished, shred the chicken with two forks directly in the pot and stir everything together.
