A comforting slow-cooked dish combining tender beef with a blend of spices and dried chiles, perfect for family gatherings.

  • 2 lbs beef chuck, cut into chunks
  • 2 cups beef broth
  • 46 pieces dried red chiles (like Ancho or New Mexico)
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Start by heating the olive oil in a skillet over medium-high heat. Add the beef chunks in batches, searing until browned on all sides, then transfer to the slow cooker.
  2. Add the chopped onion and minced garlic to the skillet and sauté until translucent and fragrant, stirring frequently.
  3. Prepare your dried red chiles by removing the stems and seeds, then toasting them lightly in the skillet for about 1-2 minutes. Transfer chiles to a blender, add 1 cup of beef broth, and blend until smooth.
  4. Pour the blended chile sauce into the slow cooker with the browned beef. Add the remaining beef broth, cumin, oregano, and season with salt and pepper to taste. Stir to combine.
  5. Cover the slow cooker and set it to low heat. Slow cook for 6-8 hours to allow flavors to meld.
  6. Taste the red chile and adjust seasoning if necessary before serving.

Notes

Serve with fresh cilantro or sliced avocado for garnish. Pairs well with warm tortillas, rice, or crispy nachos.
