  • 2 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 10.5 ounces condensed French onion soup
  • 1 cup low-sodium beef broth
  • 1 tablespoon balsamic vinegar (optional)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 2 tablespoons cornstarch (optional, for thicker gravy)
  • 1/4 cup water (if using cornstarch)
  • 1 to 1 1/2 cups shredded Gruyère or mozzarella cheese
  • Fresh parsley or thyme (for garnish)

Instructions

  1. Start by placing the frozen meatballs in a 4 to 6-quart slow cooker. Next, layer the sliced onions and minced garlic over the meatballs, ensuring every bite gets that delicious flavor.
  2. In a mixing bowl, whisk together the French onion soup, low-sodium beef broth, balsamic vinegar (if you choose to include it), dried thyme, and black pepper. Pour this sauce over the meatballs and onions, making sure everything is coated well.
  3. Cover the slow cooker and cook on LOW for 5 to 6 hours, or opt for HIGH and cook for 2 to 3 hours. Stir halfway through if possible.
  4. If you want a thicker gravy, mix the cornstarch and water to form a slurry. Stir this into the crockpot and let it cook on HIGH for an additional 10 to 15 minutes.
  5. Sprinkle the shredded cheese over the top. Cover again and let the cheese melt for about 5 minutes.
  6. Garnish with fresh parsley or thyme before serving. These meatballs are fantastic served over mashed potatoes or egg noodles.

Feel free to use homemade meatballs and cheese variations such as Swiss or cheddar. This dish can be made vegetarian with plant-based meatballs.
