Warm, crispy tortillas filled with melted cheese, savory chicken (or beans), and zesty salsa – perfect for parties or quick snacks.

  • 6 small tortillas
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup cooked and shredded chicken (or beans for a vegetarian option)
  • 1/2 cup salsa
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped green onions
  • Olive oil or cooking spray
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lay out the tortillas on a flat surface and sprinkle cheese evenly on half of each tortilla.
  3. Add shredded chicken (or beans), salsa, diced bell peppers, and chopped green onions on top of the cheese.
  4. Fold each tortilla in half to create a half-moon shape.
  5. Brush both sides of the tortilla bites with olive oil or spray with cooking spray.
  6. Place the tortilla bites on a baking sheet and season them with salt and pepper.
  7. Bake for 10-15 minutes or until they are golden and crispy.
  8. Serve warm with extra salsa or your favorite dipping sauce.

Notes

For extra crunch, let the tortilla bites rest for a minute after baking.
