A comforting and satisfying dish combining crispy roasted cauliflower with bold flavors of cheddar and parmesan, perfect for weeknight dinners and gatherings.

Ingredients

  • 1 large cauliflower
  • 6 tbsp olive oil
  • 1 tsp Old Bay seasoning
  • 0.5 tsp chili pepper
  • Fresh ground pepper to taste
  • 8 oz sharp white cheddar cheese, grated
  • 4 oz parmesan cheese, grated

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Pull the florets from the cauliflower head and slice larger florets in half.
  3. Drizzle the olive oil over the cauliflower florets and stir to coat.
  4. Sprinkle the Old Bay seasoning, chili pepper, and fresh ground pepper over the florets and toss to combine.
  5. Line a baking sheet with foil and spread the florets in a single layer.
  6. Place the baking sheet on the top rack of the oven and bake for 15 minutes.
  7. Grate the sharp white cheddar and parmesan cheese.
  8. Remove the baking sheet from the oven and sprinkle the cheeses over the roasted cauliflower.
  9. Optional: return to the oven for a few minutes for more melted cheese.
  10. Serve warm and enjoy!

Notes

For extra crispiness, consider using convection baking. Experiment with spices to customize the flavor.
