A nostalgic recipe for crispy oven-fried potatoes and onions, seasoned to perfection for a delightful side dish.

  • 4 medium Yukon gold potatoes, sliced into rounds
  • 1 large onion, sliced into thin wedges
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Line a large baking sheet with parchment paper or lightly grease it.
  3. Combine the sliced potatoes and onions in a large bowl.
  4. Drizzle with olive oil and toss to coat evenly.
  5. Sprinkle garlic powder, paprika, dried thyme, salt, and black pepper over the vegetables and toss again.
  6. Spread the seasoned potatoes and onions out in a single layer on the prepared baking sheet.
  7. Place the baking sheet in the preheated oven and bake for 35-40 minutes, flipping halfway through.
  8. Remove from the oven, sprinkle with freshly chopped parsley, and serve hot.
