Deliciously crispy baked zucchini fries that are low-carb and perfect for a healthy snack or side dish.

  • 2 medium zucchinis
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 large eggs
  • Olive oil spray

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchinis into fries, ensuring uniform thickness.
  3. In a bowl, mix together the almond flour, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. Whisk the eggs in another bowl until well-beaten.
  5. Dip each zucchini fry into the egg mixture, then transfer to the almond flour mixture to coat.
  6. Place the coated fries on a baking sheet lined with parchment paper.
  7. Spray lightly with olive oil.
  8. Bake for 20-25 minutes or until golden and crispy.
  9. Serve with your favorite dipping sauce.

Notes

For added crunch, consider adding crushed pork rinds to the almond flour mixture. Store leftovers in an airtight container for up to 3 days.
