Delightfully crispy scallion pancakes, perfect as a snack, appetizer, or side dish.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup boiling water
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil (for frying)
  • 1/2 cup finely chopped scallions (green onions)
  • Soy sauce (for dipping)

Instructions

  1. Combine flour and salt. Gradually add boiling water and stir until a rough dough forms. Allow to cool slightly.
  2. Knead the dough for about 5 minutes until smooth and elastic. Cover and let rest for 30 minutes.
  3. Shape the dough into 4 equal pieces, rolling each into a thin circle. Brush with oil, sprinkle with scallions, and roll tightly into a log.
  4. Coil the log into a spiral shape and gently flatten to create a pancake.
  5. Fry each pancake in heated oil over medium heat for 3-4 minutes on each side until golden brown and crispy. Drain on paper towels.

Notes

Serve warm with soy sauce or your favorite dipping sauce. Leftovers can be stored in an airtight container in the fridge for about 2 days.
