Delicious homemade taquitos filled with spiced beef and cheese, perfect for family dinners or gatherings.

Ingredients

  • 2 cups ground beef
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 teaspoon taco seasoning
  • 10 corn tortillas
  • Oil for frying
  • Salsa or guacamole for serving

Instructions

  1. Sauté the ground beef in a skillet over medium heat until browned. Drain any excess fat. Stir in taco seasoning and mix well.
  2. Remove from heat and let cool slightly. Mix in the shredded cheese until fully incorporated.
  3. Warm the corn tortillas in a dry skillet to make them pliable, about 30 seconds on each side.
  4. Spoon a portion of the beef and cheese mixture onto each tortilla, then roll them tightly to secure the filling.
  5. Heat oil in a large skillet over medium-high heat. Fry the taquitos until crispy and golden, about 3-4 minutes on each side.
  6. Drain the taquitos on paper towels and serve them hot with salsa or guacamole for dipping.

Notes

Make sure to warm tortillas before rolling to prevent cracking. Don’t overfill the tortillas; about 2 tablespoons of filling per taquito is ideal.
