  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper. Lightly coat the parchment paper with cooking spray.
  2. Cut the boneless, skinless chicken breasts into bite-sized pieces and place them in a large bowl.
  3. Drizzle the chicken with olive oil and toss to coat. Add garlic powder, onion powder, paprika, salt, and black pepper, then toss again.
  4. Combine panko breadcrumbs, grated Parmesan cheese, and chopped parsley in a separate bowl.
  5. Dredge each chicken piece in the breadcrumb mixture, pressing gently.
  6. Arrange the coated chicken bites in a single layer on the prepared baking sheet and spray the tops with cooking spray.
  7. Bake for 18-20 minutes, flipping halfway through the cooking time.
