Delicious crispy bacon cheese bites, perfect for gatherings or movie nights, featuring gooey cheddar cheese and crunchy bacon atop crispy potato rounds.

Ingredients

  • 8 ounces cheddar cheese, shredded
  • 8 strips bacon, cooked and crumbled
  • 4 medium potatoes, sliced into 1/2 inch rounds
  • 1/2 cup green onions, minced
  • 1/4 cup butter, melted

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet.
  2. Wash and slice the potatoes into 1/2 inch rounds, then pat them dry.
  3. Brush the potato slices with melted butter and bake for 20 minutes; flip and bake for an additional 10-15 minutes.
  4. Top each potato slice with shredded cheddar cheese and crumbled bacon, then bake for another 5 minutes.
  5. Garnish with minced green onions and serve warm with your favorite dipping sauce.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven for best results.
