A rich and comforting pasta dish infused with garlic and sun-dried tomatoes, perfect for weeknight dinners.

  • 2 Boneless chicken breasts
  • 1 tablespoon Cooking oil
  • 1 teaspoon Butter
  • 3 cloves Garlic, minced
  • 0.5 Onion, minced
  • 3 Sun-dried tomatoes, halves, chopped
  • 1 tablespoon Tomato paste
  • 1 cup Heavy cream
  • 1 cup Chicken stock
  • ¼ cup Parmesan cheese
  • Fresh basil for garnish
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Dried thyme or Italian herbs
  • 1 teaspoon Red pepper flakes
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper

Instructions

  1. Cook the Pasta: Begin by cooking your penne pasta according to the package instructions until it’s al dente. Once done, drain it and set it aside for later.
  2. Heat the Oil and Butter: In a large skillet over medium heat, combine the cooking oil and butter. Wait for the butter to melt and the oil to shimmer—that’s the sweet spot for starting your sauté.
  3. Sauté Garlic and Onion: Add the minced garlic and onion to the skillet, allowing them to sauté until they become fragrant and translucent.
  4. Cook the Chicken: Introduce the boneless chicken breasts into the skillet. Cook them for about 6 to 8 minutes on each side until golden brown.
  5. Add Sun-Dried Tomatoes and Tomato Paste: In the same skillet, toss in the sun-dried tomatoes and tomato paste. Cook these together for about 2 minutes to blend the flavors nicely.
  6. Pour in Cream and Chicken Stock: Next, pour in the heavy cream and chicken stock, gently stirring to combine. Let this simmer for about 5 to 7 minutes so that the sauce can thicken and develop richness.
  7. Combine and Season: Return the sliced chicken back to the skillet, swirling it in the creamy sauce. Toss in the cooked pasta next, coating everything well. Season with salt and pepper to taste. Serve hot, garnished with fresh basil.

Notes

For extra creaminess, consider stirring in an additional tablespoon of Parmesan cheese just before serving.
