A comforting dish of creamy tortellini filled with fresh tomatoes and a hint of spice.

Ingredients

  • Cheese tortellini (or your preferred type)
  • Olive oil
  • Shallots
  • Garlic
  • Fresh tomatoes
  • Heavy cream
  • Parmesan cheese
  • Red pepper flakes
  • Spinach (for garnish)

Instructions

  1. Heat the olive oil in a skillet over medium heat, letting its golden hue shimmer as it warms.
  2. Sauté shallots and garlic for about 3 minutes, keeping a watchful eye to ensure the garlic doesn’t burn.
  3. Add fresh tomatoes to the skillet and cook for 10 minutes until they soften, pressing down gently to release their juicy goodness.
  4. Stir in your favorite spices along with red pepper flakes and a dollop of tomato paste.
  5. Mix in the heavy cream and allow it to simmer for 2-3 minutes.
  6. Gently fold in the cooked tortellini and chopped spinach.
  7. Generously sprinkle with Parmesan cheese just before serving.
  8. Adjust the seasoning with salt and garnish with fresh parsley or basil if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove over low heat.
