A comforting and flavorful pasta dish featuring creamy sauce made with roasted garlic and tomatoes.

Ingredients

  • 8 ounces pasta (spaghetti or penne)
  • 1 can (14.5 ounces) diced tomatoes
  • 4 garlic cloves, roasted
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • Fresh basil, chopped
  • Fresh thyme, chopped
  • 1/2 cup grated Parmesan cheese
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package directions until al dente. Drain and set aside.
  2. In a pan, heat olive oil over medium heat and add the roasted garlic, cooking for a minute until it’s fragrant and slightly caramelized.
  3. Add the canned tomatoes to the pan with the garlic and let them simmer for about 5 minutes, allowing the flavors to meld.
  4. Stir in the heavy cream and butter, mixing until melted and well combined into a luscious sauce.
  5. Add salt and pepper to taste, then toss in the cooked pasta, making sure it’s well coated with that gorgeous sauce.
  6. Mix in the chopped fresh basil and thyme, allowing their flavors to infuse the dish beautifully.
  7. Serve topped with grated Parmesan cheese, letting it melt a bit before diving in!

Notes

This pasta pairs well with side salad and a glass of white wine. Store leftovers in the fridge for up to 3 days.
