A comforting one-pot meal featuring tender pasta, seasoned chicken, and a spicy creamy buffalo sauce.

  • 1 lb cooked chicken (shredded or diced)
  • 12 oz fettuccine or penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup buffalo sauce
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp cream cheese
  • Salt and pepper to taste

Instructions

  1. Heat up the flavor: In a large deep pot, heat olive oil or butter over medium heat. Add the cooked chicken, seasoning it with garlic powder, salt, and pepper. Sauté for 2–3 minutes until the chicken becomes fragrant.
  2. Create the creamy mixture: Pour in the chicken broth, heavy cream, and buffalo sauce; stir well to combine these luscious ingredients.
  3. Add the pasta: Now, add the uncooked pasta directly into the mixture. Don’t worry; it will soak up all those wonderful flavors as it cooks!
  4. Bring to a boil: Bring your pot to a gentle boil. Once bubbling, reduce the heat to low and let it simmer uncovered for 10–12 minutes, or until the pasta is perfectly tender.
  5. Stir in the cheeses: Once your pasta is cooked, stir in the Parmesan cheese, mozzarella cheese, and cream cheese. Continue stirring until everything is melted and smooth.
  6. Final seasoning & garnish: Adjust the seasoning as needed, adding more salt and pepper if desired. Just before serving, garnish with chopped green onions or parsley for a fresh touch.

Notes

Adjust the amount of buffalo sauce to suit your heat preference. Rotisserie chicken works well to save time. Store leftovers in an airtight container for up to 3 days.
