A comforting dish featuring seasoned chicken breasts, fluffy rice, and a creamy cheese sauce that will warm your heart.

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • ½ teaspoon salt
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1½ cups whole milk
  • ½ cup chicken broth
  • ½ teaspoon garlic powder
  • ¼ teaspoon thyme
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts generously with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Brown the chicken in a large skillet with olive oil over medium heat, cooking for 6-7 minutes per side until golden brown.
  3. Cook the rice by bringing chicken broth and salt to a boil, then adding rice and simmering for 15-18 minutes.
  4. Make the creamy sauce in the same skillet by melting butter, adding flour, and whisking in milk and additional broth.
  5. Add shredded cheddar and grated Parmesan cheese to the sauce, mixing until melted and smooth.
  6. Assemble by placing cooked rice on plates, topping with chicken and pouring the creamy sauce over all. Garnish with parsley.

Notes

Serve with a green salad and crusty bread. This dish can be stored in the refrigerator for up to 3 days.
