A delightful pasta salad featuring fresh peas and crispy bacon, all wrapped in a creamy dressing.

Ingredients

  • 8 oz pasta (fusilli or rotini)
  • 4 slices bacon
  • 1 cup fresh peas (or frozen peas)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Chives (for garnish, optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain the pasta in a colander, then let it cool completely.
  2. Crisp the bacon in a skillet over medium heat until crispy, then remove and crumble it into pieces.
  3. Sauté the peas in the same skillet for 2-3 minutes until tender and vibrant green.
  4. Prepare the dressing by mixing mayonnaise, sour cream, lemon juice, salt, and pepper in a large bowl.
  5. Combine the cooled pasta, crumbled bacon, and sautéed peas with the dressing, tossing gently.
  6. Chill the salad in the refrigerator for at least 30 minutes.
  7. Serve the salad with a toss and garnish with chopped chives if desired.

Notes
