A comforting bowl of creamy Parmesan rice flavored with garlic and lemon, perfect as a side or light main course.

Ingredients

  • 1 cup long-grain or medium-grain rice
  • 2 cups chicken or vegetable broth
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Heat the broth in a medium saucepan until it simmers.
  2. Sauté the garlic in melted butter in a skillet until fragrant.
  3. Toast the rice in the garlic butter for 2-3 minutes, stirring frequently.
  4. Stir in the simmering broth, bring to a boil, then cover and reduce heat to simmer for 15-18 minutes.
  5. Add Parmesan cheese and lemon juice, stirring well and seasoning to taste.
  6. Garnish with chopped parsley before serving.

Notes

For the best flavor, use freshly grated Parmesan cheese. Customize the dish by adding herbs or other vegetables.
