A comforting dish of creamy rice enriched with garlic and Parmesan cheese, perfect for chilly evenings.

Ingredients

  • 1 cup rice
  • 2 cups chicken or vegetable broth
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, melt the butter over medium heat and sauté the minced garlic until fragrant.
  3. Add the rinsed rice to the saucepan and stir for another minute.
  4. Pour in the chicken or vegetable broth and bring it to a boil.
  5. Reduce the heat to low, cover the pot, and let the rice simmer until all the liquid is absorbed.
  6. Remove from heat and stir in the grated Parmesan cheese and lemon juice until creamy.
  7. Season with salt and pepper, and garnish with chopped parsley if desired.

Notes

For extra flavor, consider adding sautéed mushrooms or other spices.
