A comforting one-pot meal combining chicken, rice, and a rich creamy sauce, perfect for weeknight dinners or cozy gatherings.

Ingredients

  • 1.5 pounds chicken breasts (cut into 1-inch pieces)
  • 4 tablespoons butter
  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 1/2 cups chicken broth
  • 1 cup long grain white rice
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • Parsley (optional, for garnish)

Instructions

  1. Sauté the Chicken: In a large pot or skillet, melt the butter over medium heat. Add the chicken pieces and sauté until browned all over, about 5-7 minutes. Remove the chicken from the pot and set aside.
  2. Sauté the Aromatics: In the same pot, add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and sauté for an additional minute.
  3. Season and Combine: Sprinkle in the Italian seasoning, salt, and pepper, stirring to combine with the onions and garlic.
  4. Add the Rice: Pour in the rice and stir well to coat it with the aromatic mixture. Let it toast slightly for 1-2 minutes.
  5. Pour the Broth: Slowly add the chicken broth, scraping up any bits stuck at the bottom of the pot. Bring the mixture to a gentle boil.
  6. Return the Chicken: Once boiling, add the sautéed chicken back into the pot. Cover and reduce the heat to low. Simmer for 20 minutes.
  7. Stir in the Cream and Parmesan: Remove the pot from the heat and stir in the heavy cream and grated parmesan cheese.
  8. Garnish and Serve: Serve hot, garnished with fresh parsley if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of broth to loosen up.
