Delicious and nutritious muffins packed with protein, perfect for breakfast or a snack.

Ingredients

  • 1 cup Greek yogurt
  • 2 cups oats
  • 1/2 cup almond milk
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 scoop protein powder
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 cup add-ins (e.g., chocolate chips, nuts, or fruit)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. Combine the Greek yogurt, almond milk, honey, and eggs in a large bowl until well combined.
  3. Mix the oats, protein powder, baking powder, and any chosen add-ins in another bowl.
  4. Combine the dry ingredients with the wet ingredients and stir until just combined.
  5. Fill the muffin tin with the batter, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes until a toothpick inserted in the center comes out clean.
  7. Cool for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container for up to 3 days or freeze for up to 3 months. Can be served with Greek yogurt or honey.
