A comforting bowl of ramen filled with tender chicken, vibrant vegetables, and a rich, creamy broth.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups ramen noodles
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup mixed vegetables (such as carrots, bell pepper, and spinach)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Sauté the garlic in olive oil over medium heat until fragrant and golden.
  2. Brown the chicken breasts in the pot until browned on both sides, about 5-7 minutes.
  3. Pour in the chicken broth and bring the mixture to a vigorous boil.
  4. Reduce the heat, cover, and let simmer for about 20 minutes until the chicken is cooked through.
  5. Remove the chicken, shred it into bite-sized pieces, and return it to the pot.
  6. Add the ramen noodles into the broth and cook according to package instructions, about 4-5 minutes.
  7. Stir in the heavy cream, mixed vegetables, soy sauce, along with salt and pepper.
  8. Simmer until everything is heated through and the vegetables are tender. Serve hot, garnished with green onions.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, warm gently on the stove, adding a splash of broth.
