A comforting blend of chicken, rich cream, and fluffy gnocchi in a delightful sauce.

  • 1 pound boneless skinless chicken breast
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 packet ranch seasoning mix
  • 1 cup low sodium chicken broth
  • 1 cup heavy cream
  • 8 ounces cream cheese, softened
  • 4 slices bacon, crumbled
  • 1 pound potato gnocchi
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat the olive oil and butter in a large skillet over medium heat. Add the diced chicken and cook for 5-7 minutes, until golden brown and cooked through.
  2. Stir in the minced garlic and cook for 30 seconds, until fragrant.
  3. Add the ranch seasoning, chicken broth, and heavy cream. Bring to a simmer, then stir in the softened cream cheese until melted and smooth.
  4. Add the potato gnocchi and cook for 3-5 minutes, until tender and floating.
  5. Stir in the crumbled bacon and shredded cheddar cheese until melted. Season with salt and pepper to taste.
  6. Garnish with fresh parsley and serve hot.

Notes

For a lighter version, substitute half-and-half for heavy cream. Feel free to add spinach or sundried tomatoes for extra nutrients.
