1 pound boneless skinless chicken breast
2 tablespoons olive oil
2 tablespoons butter
3 cloves garlic, minced
1 packet ranch seasoning mix
1 cup low sodium chicken broth
1 cup heavy cream
8 ounces cream cheese, softened
4 slices bacon, crumbled
1 pound potato gnocchi
1 cup shredded cheddar cheese
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup fresh parsley, chopped
Instructions
Heat the olive oil and butter in a large skillet over medium heat. Add the diced chicken and cook for 5-7 minutes, until golden brown and cooked through.
Stir in the minced garlic and cook for 30 seconds, until fragrant.
Add the ranch seasoning, chicken broth, and heavy cream. Bring to a simmer, then stir in the softened cream cheese until melted and smooth.
Add the potato gnocchi and cook for 3-5 minutes, until tender and floating.
Stir in the crumbled bacon and shredded cheddar cheese until melted. Season with salt and pepper to taste.
