A comforting casserole packed with tender chicken, vibrant spinach, and rich, creamy cheese that brings warmth and nostalgia.

  • 2 boneless skinless chicken breasts (large)
  • 2 tablespoons olive oil (divided)
  • 3 cloves garlic (minced)
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh spinach
  • 8 ounces cream cheese (softened)
  • 1 cup shredded mozzarella cheese (divided)
  • 1/2 cup Parmesan cheese (optional)

Instructions

  1. Heat 1 tablespoon of olive oil over medium-high heat. Season chicken breasts with salt, pepper, and Italian seasoning, then add and sear each side for about 5-6 minutes. Remove and let rest.
  2. Add the remaining tablespoon of olive oil and toss in minced garlic. Sauté for about 30 seconds until fragrant.
  3. Introduce the fresh spinach to the pan, cooking until it wilts (about 2 minutes).
  4. Combine softened cream cheese, half of the shredded mozzarella, and sautéed spinach and garlic in a mixing bowl until creamy.
  5. Slice the seared chicken into bite-sized pieces and fold into the cream cheese mixture.
  6. Transfer the mixture into a greased baking dish. Top with remaining mozzarella and optional Parmesan cheese.
  7. Preheat the oven to 375°F (190°C) and bake for about 25-30 minutes or until cheese is bubbly and golden brown.
  8. Let it sit for a few minutes to set before serving.
  9. Spoon out generous portions and enjoy!

Notes

This casserole can be frozen for up to 2 months. Reheat in the oven at 350°F (175°C) until warmed through.
