  • 10 oz farfalle bow-tie pasta
  • 1.5 lb chicken thighs or breasts (skinless, boneless)
  • 1.5 teaspoons smoked paprika
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt, to taste
  • Freshly ground black pepper, to taste
  • 2 cups corn kernels (cooked) (about 4 corn ears)
  • 1 teaspoon chili powder
  • 1 cup heavy cream
  • ½ cup Parmesan cheese (shredded)
  • 1 tablespoon olive oil
  • 8 strips bacon (cooked, chopped)
  • Fresh herbs (thyme, oregano, or marjoram) (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add the farfalle pasta and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water to adjust the sauce later.
  2. While the pasta cooks, season the chicken thighs or breasts with smoked paprika, Italian seasoning, salt, and pepper. In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken and cook for about 6-7 minutes on each side, or until fully cooked. Remove from the skillet, let it rest, and then slice into bite-sized pieces.
  3. In the same skillet, reduce the heat to medium-low. Add the chopped bacon and cook until crispy. Next, add the cooked corn to the skillet along with the chili powder. Stir well to combine and let it cook for about 3 minutes, allowing the flavors to meld.
  4. Pour the heavy cream into the skillet, stirring it into the corn and bacon mixture. Bring to a gentle simmer, and let it cook for 2-3 minutes until slightly thickened. Stir in the Parmesan cheese until melted and smooth.
  5. Add the cooked pasta and sliced chicken to the skillet, tossing everything together until well coated in the creamy sauce. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.
  6. Taste your pasta and adjust the seasoning with additional salt and pepper if needed. Garnish with fresh herbs like thyme, oregano, or marjoram for a touch of freshness.
  7. Plate the creamy chicken and corn pasta in generous portions and serve immediately, enjoying the symphony of flavors.

Notes

Feel free to switch chicken thighs for breasts or use turkey bacon for a lighter option. Store leftovers in an airtight container in the fridge for up to 3 days.
