Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoon butter, divided
  • 1 cup sliced mushrooms
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo
  • 1/2 cup Marsala wine
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Optional: Chopped parsley for serving

Instructions

  1. Season the chicken breasts with salt and black pepper.
  2. Sear the chicken in a skillet with olive oil and butter until browned and cooked through.
  3. Sauté the sliced mushrooms and onion in the same skillet, then add garlic.
  4. Toast the orzo for 1 minute.
  5. Add Marsala wine and simmer for 1-2 minutes.
  6. Combine with chicken broth, simmering until orzo is tender.
  7. Create the creamy sauce by stirring in heavy cream and Parmesan cheese.
  8. Return the cooked chicken to the skillet and warm through.
  9. Garnish with chopped parsley and serve hot.

Notes

Pairs well with a green salad or garlic bread. Leftovers can be stored in an airtight container for up to 3 days.
