Creamy Chicken Marsala Orzo

A comforting yet sophisticated one-pan dish featuring tender chicken, earthy mushrooms, and creamy orzo, made in just 30 minutes.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons butter, divided
  • 1 cup sliced mushrooms
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo
  • 1/2 cup Marsala wine
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Optional: Chopped parsley for serving

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat the olive oil and 1 tablespoon of butter over medium-high heat. Add the seasoned chicken and cook for 5-6 minutes, then remove and set aside.
  3. Add the remaining 1 tablespoon of butter, mushrooms, and onion to the skillet; sauté for 6-8 minutes.
  4. Stir in the minced garlic; cook for 30 seconds.
  5. Stir the orzo into the skillet for about a minute.
  6. Pour in the Marsala wine and let it simmer for 1-2 minutes.
  7. Add the chicken broth and bring to a simmer; cook for 10-12 minutes until orzo is tender.
  8. Reduce the heat, then stir in the heavy cream and Parmesan cheese.
  9. Fold the cooked chicken back into the skillet.
  10. Garnish with chopped parsley if desired and serve hot.

Notes

For best flavor, allow the chicken to rest after cooking. Substitute Marsala with dry sherry if unavailable.
