Creamy Chicken and Gnocchi

A comforting dish featuring tender chicken in a rich, velvety sauce with soft gnocchi, sundried tomatoes, and baby spinach.

Ingredients

  • 2 tablespoons olive oil or sundried tomato oil
  • 1 pound chicken breast (cut into ¾ – 1 inch pieces)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons butter
  • 2 cloves garlic (minced)
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 16 ounces gnocchi
  • 1 teaspoon smoked paprika
  • â…“ cup sundried tomatoes (chopped)
  • ½ cup Parmesan cheese (grated)
  • 2 cups baby spinach leaves

Instructions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the chicken pieces to the skillet. Season with Italian seasoning, salt, and pepper. Cook until golden brown and cooked through, about 6-8 minutes.
  3. Once done, reduce the heat to medium and add the butter and minced garlic. Sauté for another minute until fragrant.
  4. Pour in the chicken stock and heavy cream, stirring to combine. Bring to a gentle simmer.
  5. Add the gnocchi to the skillet. Cook according to package instructions, about 2-4 minutes until they float and are tender.
  6. Stir in the smoked paprika, sundried tomatoes, and half of the Parmesan cheese. Let it simmer until thickened slightly.
  7. Fold in the baby spinach and allow it to wilt for about a minute in the sauce.
  8. Serve hot, garnishing with the remaining Parmesan cheese.

Notes

Pairs well with a side salad and a chilled glass of white wine. Can be stored in an airtight container for about 3 days.
