A warm and spicy creamy soup filled with tender potatoes and andouille sausage, perfect for chilly evenings.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 pound andouille sausage, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sauté until translucent.
  3. Add the sliced sausage and cook until browned.
  4. Stir in the diced potatoes, chicken broth, Cajun seasoning, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat and simmer for about 20 minutes until potatoes are tender.
  6. Stir in the heavy cream and cook for an additional 5 minutes.
  7. Serve hot, garnished with chopped green onions.

Notes

Pairs well with crusty bread and a side salad. Can freeze before adding cream for up to 3 months.
