A healthier twist on traditional Caesar dressing featuring creamy Greek yogurt and classic flavors, perfect for salads and dips.

Ingredients

  • 1 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Worcestershire sauce
  • 1 clove garlic, minced
  • 1 teaspoon anchovy paste (or 2 anchovy fillets, minced)
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and black pepper to taste
  • 1 – 2 tablespoons water (optional, for thinning)

Instructions

  1. Combine the Greek yogurt and mayonnaise in a medium mixing bowl. Whisk until smooth and creamy.
  2. Add the Dijon mustard, red wine vinegar, and Worcestershire sauce to the bowl. Whisk to incorporate.
  3. Mix in the minced garlic and anchovy paste (or minced anchovy fillets) until well combined.
  4. Gradually add the freshly grated Parmesan cheese, ensuring it’s evenly distributed.
  5. Taste the dressing and season with salt and black pepper as desired.
  6. If a thinner consistency is preferred, add water one tablespoon at a time and whisk until desired texture is achieved.
  7. Transfer the dressing to an airtight container and refrigerate for at least 30 minutes to allow flavors to meld.

Notes

For extra flavor, add minced herbs or substitute for a vegan option using plant-based yogurt and mayo.
