  • 2 pounds Yukon gold potatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/2 cup unsalted butter
  • 3/4 cup heavy cream
  • 1/4 cup sour cream
  • 2 tablespoons chopped fresh chives

Instructions

  1. Prepare the potatoes: Peel the potatoes and cut them into even 1½-inch chunks.
  2. Boil the potatoes: Place the potatoes in a large pot with cold water, add salt, and boil until fork-tender, about 15–20 minutes.
  3. Drain and dry: Drain potatoes well and return to pot over low heat to evaporate moisture.
  4. Warm the butter and cream: Heat together in a small saucepan until butter melts.
  5. Mash the potatoes: Use a masher or ricer until smooth.
  6. Combine with butter-cream mixture: Slowly pour in the mixture while stirring.
  7. Mix in cream and seasonings: Stir until smooth, adjusting seasoning as needed.
  8. Serve: Transfer to a serving dish and garnish with fresh chives.
