A rich and indulgent buffalo chicken pasta bake that’s quick to prepare and perfect for cozy gatherings.

  • 8 oz penne pasta
  • 2 cups cooked shredded chicken (rotisserie works well)
  • 1 cup buffalo sauce
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ranch dressing
  • 1/4 cup chopped green onions (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the penne pasta according to package instructions until al dente; drain and set aside.
  3. Mix the shredded chicken, buffalo sauce, cream cheese, ranch dressing, and half of both cheddar and mozzarella cheeses in a large mixing bowl.
  4. Stir in the cooked pasta until evenly coated.
  5. Transfer the mixture to a greased 9×13 inch baking dish.
  6. Sprinkle the remaining cheddar and mozzarella cheeses over the top.
  7. Bake for approximately 20 minutes, or until the cheese is bubbly and golden brown.
  8. Cool for a few minutes before serving and garnish with green onions if desired.

Notes

This dish stores well in the fridge for up to 3 days; reheat in the oven or microwave. You can swap cream cheese for Greek yogurt for a lighter version.
