A comforting dish featuring juicy chicken breasts bathed in a creamy sauce with sun-dried tomatoes and spinach.

  • 4 boneless chicken breasts
  • 1/2 cup chopped sun-dried tomatoes (packed in oil)
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/2 cup heavy whipping cream
  • 1/2 cup chicken stock
  • 1 teaspoon garlic powder
  • 1 tablespoon all-purpose flour
  • 1/2 cup grated Parmesan cheese (divided)
  • 1 cup finely chopped spinach (fresh or defrosted frozen)
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, season the chicken breasts with onion powder, paprika, Italian seasoning, salt, and pepper.
  3. Sear the seasoned chicken breasts for about 3-4 minutes on each side until they’re golden brown.
  4. Add the flour to the same skillet, then slowly whisk in the chicken stock and cream until smooth.
  5. Stir in the sun-dried tomatoes, garlic powder, and half of the grated Parmesan cheese. Fold in the spinach.
  6. Place the seared chicken in a baking dish, pour the sauce over the top, and sprinkle the remaining Parmesan cheese. Cover with foil and bake for 20 minutes.
  7. After 20 minutes, remove the foil and bake for an additional 10 minutes until the chicken is cooked through and bubbling.
  8. Allow the dish to rest for a few minutes before serving.

Notes

Serve with buttery garlic mashed potatoes, fresh steamed vegetables, or a green salad.
