A delightful salad combining fresh corn with creamy ingredients, crispy bacon, and vibrant veggies, perfect for picnics and barbecues.

Ingredients

  • 2 cups fresh corn kernels
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tbsp granulated sugar
  • 1 tbsp apple cider vinegar
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup diced red bell pepper
  • 2 tbsp chopped green onions
  • 1/4 cup bacon bits
  • 2 tbsp chopped fresh cilantro

Instructions

  1. Blanch the corn kernels in boiling water for 2 minutes, then drain and cool. If using frozen corn, simply thaw it and drain any excess water.
  2. Whisk together the mayonnaise, sour cream, granulated sugar, apple cider vinegar, salt, and black pepper until smooth.
  3. Fold in the corn, red bell pepper, green onions, bacon bits, and cilantro until everything is coated.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Stir before serving and adjust seasoning if needed.

Notes

For added crunch, consider incorporating chopped celery or cucumber. This salad can be made ahead of time for enhanced flavors.
