  • 1 medium Onion
  • 2 stalks Celery
  • 1 medium Carrot
  • 3 cloves Garlic
  • 14.5 ounces Canned diced tomatoes
  • 1 cup White wine
  • 4 cups Seafood stock
  • 1 leaf Bay leaf
  • 1 teaspoon Red pepper flakes
  • 1 teaspoon Thyme
  • to taste Salt
  • to taste Pepper
  • 1 pound White fish (like cod or haddock)
  • 8 ounces Shrimp
  • 1 pound Mussels or clams
  • 1/4 cup Fresh parsley

Instructions

  1. Heat the oil in a large pot over medium heat.
  2. Add the chopped onion, celery, and carrot, and sauté for 5-7 minutes.
  3. Stir in the minced garlic, red pepper flakes, thyme, salt, and pepper.
  4. Pour in the diced tomatoes and white wine, deglazing the pot.
  5. Add the seafood stock and bring to a gentle simmer.
  6. Incorporate the bay leaf and let it simmer for 10 minutes.
  7. Fold in the white fish, shrimp, and mussels, cover the pot, and simmer for another 5-7 minutes.
  8. Remove the bay leaf, stir in the fresh parsley, and adjust seasoning as necessary.

Notes

Serve with crusty bread for dipping and enjoy alongside a light salad or corn on the cob. Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
