A delightful dish combining savory bacon, sweet onions, and meaty mushrooms, perfect as a side or main course.

  • 1 pound large fresh mushrooms (such as portobello or cremini)
  • 4 strips of thick-cut bacon, chopped
  • 1 medium onion, finely chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Begin by cleaning the mushrooms with a damp cloth to remove any dirt.
  2. Cut the stems off the mushrooms and set them aside.
  3. Slice the mushroom caps into thick pieces.
  4. Heat the olive oil over medium heat in a large skillet.
  5. Add the chopped bacon and cook until crispy, about 5-7 minutes.
  6. Transfer the bacon to a paper towel-lined plate to drain excess fat.
  7. Add the chopped onions to the skillet and cook for about 4-5 minutes until translucent.
  8. Add the minced garlic and cook for 1-2 minutes until fragrant.
  9. Stir in the sliced mushroom caps and reserved stems; cook for 6-8 minutes until tender.
  10. Sprinkle the smoked paprika, thyme, salt, and pepper over the mixture; stir to combine and cook for another 2-3 minutes.
  11. Stir the crispy bacon back into the skillet and mix thoroughly.
  12. Transfer the mixture to a serving dish and garnish with parsley before serving.

Notes

Use thick-cut bacon for better flavor, and feel free to try different mushroom varieties.
