A vibrant cheese log stuffed with creamy cheese and zesty cowboy caviar, perfect for summer gatherings.

Ingredients

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup cowboy caviar (black beans, corn, diced tomatoes, bell peppers, onions, and cilantro)
  • 1/2 cup diced jalapeños (fresh or pickled)
  • 1/4 cup chopped fresh cilantro
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. In a mixing bowl, combine the softened cream cheese and shredded cheddar cheese until well blended.
  2. Fold in the cowboy caviar, diced jalapeños, chopped cilantro, garlic powder, onion powder, salt, and pepper.
  3. Shape the mixture into a log and wrap it in plastic wrap.
  4. Chill in the refrigerator for at least 1 hour to firm up.
  5. Remove from the refrigerator, unwrap, and serve with tortilla chips.

Notes

Store leftovers wrapped in plastic wrap or an airtight container in the refrigerator for up to 3 days. Can be frozen for up to 2 months.
