  • 1 can (15 ounce) black-eyed peas, rinsed and drained
  • 2 cups diced tomatoes
  • 1 jalapeño, diced
  • 1 cup corn (canned or frozen)
  • 1 avocado, chopped
  • 1 orange bell pepper, diced
  • 1/2 cup red onion, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 1 tablespoon honey
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine the base ingredients: In a large bowl, combine the rinsed and drained black beans, black-eyed peas, diced tomatoes, jalapeño, corn, chopped avocado, bell pepper, red onion, and fresh cilantro.
  2. Whisk together the dressing: In a small bowl, whisk together the olive oil, lime juice, honey, chili powder, cumin, salt, and pepper to create the dressing.
  3. Dress the mixture: Pour the dressing over the vegetable and bean mixture, and gently toss to coat everything evenly.
  4. Chill for at least 30 minutes: Cover the bowl and refrigerate, allowing the flavors to meld and the ingredients to chill.

Notes
