Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 small red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • 1 teaspoon cumin (optional)

Instructions

  1. Combine the black beans, corn, diced red and green bell peppers, diced red onion, halved cherry tomatoes, diced avocado, and chopped cilantro in a large mixing bowl.
  2. Drizzle the fresh lime juice over the mixture.
  3. Season with salt, pepper, and cumin if desired.
  4. Toss gently to combine, being careful not to mush the avocado.
  5. Serve immediately at room temperature with crispy tortilla chips or chill in the refrigerator.

Notes

For best freshness, add avocado just before serving. Leftovers can be stored in an airtight container for up to 3 days.
