A vibrant and flavorful dip combining black beans, corn, and fresh vegetables, perfect for summer gatherings.

Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can black-eyed peas, rinsed and drained
  • 1 cup corn, canned or frozen and thawed
  • 1 bell pepper, diced
  • 1 jalapeño, diced
  • 1 red onion, diced
  • 1 bunch cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. Gather your ingredients.
  2. Rinse and drain the black beans and black-eyed peas.
  3. Prepare the veggies by dicing the bell pepper, jalapeño, and red onion.
  4. Chop the cilantro into small pieces.
  5. Mix all ingredients together in a large bowl.
  6. Dress the mixture with lime juice, salt, and pepper.
  7. Give everything a good mix until evenly coated.
  8. Serve Cowboy Caviar with tortilla chips.

Notes

Letting the dip sit for an hour can enhance the flavors. Customize by adding avocado or mango for different tastes.
