8 oz bowtie pasta
2 cups broccoli florets
2 breasts chicken, cooked and diced
4 tbsp butter
3 cloves garlic, minced
1 lemon, juiced and zested
Salt and pepper to taste
Parmesan cheese for serving (optional)
Instructions
Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package instructions until al dente. About two minutes before the pasta is done, toss in the broccoli florets. Once cooked, drain thoroughly and set aside.
Add the lemon juice and zest to the butter-garlic mixture. Stir for another minute to activate the oil from the zest.
Toss the cooked pasta, broccoli, and diced chicken into the skillet. Gently mix until everything is coated in the buttery sauce. Allow to cook together for 2-3 minutes.
As you serve, add an extra sprinkle of lemon zest and cracked pepper on top. Optionally, add grated Parmesan cheese.
Notes
Store leftovers in an airtight container in the fridge for up to three days. Reheat gently in a skillet with a splash of water or broth.
