A light and creamy cheesecake made with cottage cheese and cream cheese, complemented by a graham cracker crust and a hint of lemon.

  • 1 cup cream cheese
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Blend cottage cheese, cream cheese, sugar, eggs, vanilla extract, and lemon juice until smooth.
  3. Prepare the crust by mixing graham cracker crumbs and melted butter; press into a springform pan.
  4. Pour the cheesecake filling over the crust.
  5. Bake for 45-50 minutes until set, with a slight jiggle in the center.
  6. Cool and refrigerate for several hours before serving.
