A heartwarming twist on classic cornbread, this Loaded Cornbread Casserole is fluffy, cheesy, and filled with delightful flavors, perfect for family gatherings.

Ingredients

  • 1 box cornbread mix
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 can creamed corn
  • 1 cup milk (Regular or almond milk can be used)
  • 2 whole eggs
  • 1 cup cooked and crumbled bacon or sausage (optional)
  • 1 cup diced bell peppers or onions (optional)
  • Salt and pepper, to taste
  • 1/2 cup sour cream (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13 inch baking dish with butter or cooking spray.
  3. Combine the cornbread mix, creamed corn, milk, and eggs in a large bowl; stir gently until just combined.
  4. Fold in the shredded cheese, bacon or sausage, diced bell peppers, and/or onions; season with salt and pepper.
  5. Pour the mixture into the prepared casserole dish and spread it out evenly.
  6. Bake in the oven for about 30-35 minutes or until the top is golden brown and a toothpick comes out clean.
  7. Cool for about 10 minutes before serving; optionally garnish with sour cream.
  8. Slice into squares and serve warm.

Notes

For extra flavor, add spices like paprika or a splash of hot sauce. Make it vegetarian by omitting the meat.
