Delicate and elegant coffee macarons with a smooth buttercream filling, perfect for any occasion.

Ingredients

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1 tablespoon espresso powder
  • 1/2 teaspoon vanilla extract
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar (for buttercream)
  • 1 tablespoon heavy cream

Instructions

  1. Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Whisk together the almond flour, powdered sugar, and espresso powder until well combined.
  3. Beat the egg whites until foamy, gradually adding the granulated sugar until stiff peaks form.
  4. Gently fold the almond flour mixture into the meringue until fully incorporated.
  5. Transfer the mixture to a piping bag and pipe small circles onto the prepared baking sheets.
  6. Allow the piped macarons to sit for 30 minutes, forming a skin on the surface.
  7. Bake for 15-18 minutes, until risen and developed feet. Let cool completely.
  8. Beat the softened butter until creamy, then gradually add powdered sugar and heavy cream until smooth.
  9. Once the macarons have cooled, pipe buttercream onto half of them and sandwich with the other half.

Notes

Store macarons in an airtight container in the refrigerator for up to one week or freeze for up to a month.
